How to completely undo modding/reset Skyrim?

I played modded Skyrim a while ago, but I think I've kind of fucked the files up in like the 2 years since I've last played it, so I uninstalled it. I want to play again, though, but when I reinstall Skyrim and try doing all the Vortex stuff, I keep getting all sorts of error messages. Is there a way to just completely wipe/undo everything and start from the beginning again? I looked online, but all the "Make Skyrim Vanilla Again" posts have been taken down, and I think the new version also messed things up?
